ONE PAN FRANKFURTERS WITH RED CABBAGE AND APPLE
Sweet and sour flavours combine with the smoky frankfurters in this simple one-pan dinner. I think red cabbage should be used more frequently as the colour is beautiful and it lacks that strong flavour that green cabbage can often get. Combined with slices of apple and then tossed with some sweet redcurrant or red pepper jelly it’s a gorgeous combination. Throw in the frankfurters (substitute sausages if that is what you have on hand) and take the entire pan to the table for everyone to help themselves. Dinner should always be this simple!
1 tbsp oil
1 red onion, sliced finely
1 apple, sliced finely
1 clove garlic, finely chopped
½ red cabbage, very finely sliced
1 tbsp vinegar
2 tbsp redcurrant or red pepper jelly
Parsley, finely chopped
Heat a little oil in a pan and cook the frankfurters or sausages until browned. Remove from the pan and set aside.
Heat 1 tbsp of oil and cook the onion and apple over medium heat for 3-4 minutes or until the onion is soft. Add the garlic and cook for a minute. Add the finely sliced cabbage and cook for 3-4 minutes until it has softened.
Stir through the vinegar and the jelly, then add the frankfurters and heat through. Season with the black pepper.
Toss through the parsley and serve.
