PORK SAUSAGE WITH BUTTER BEANS
I quite like how sausages can be turned into a tasty, good looking dish just by popping them out of their casings and adding a few simple ingredients. Quickly made this Pork Sausage and Butter Bean recipe is on the table in 30 minutes and only uses one pan. Swap things around and use beef or lamb sausages and cannellini beans instead of butter beans thus using what you have on hand to make a satisfying and very quick meal for friends or family.
400 g (3/4 lb) good quality pork sausages
1 large onion, finely chopped
2 tbsp oil
½ tsp chilli flakes
400 g can (12 oz) chopped tomatoes
2 tbsp tomato paste
1 cup chicken stock
2 x 400 g (12 oz) cans butter beans, drained and rinsed
Parsley and thyme to serve
Heat the oil in a pan over medium heat and squeeze the sausages out of their casings into walnut sized balls straight into the pan. Toss until slightly browned then add the onion. Stir frequently for 5-6 minutes until everything is nicely browned.
Add the chilli flakes, tomatoes, tomato paste and chicken stock and cook for 10 minutes, uncovered, by which time the meatballs will be cooked through and the sauce thickened somewhat. Add the beans and heat through for a few minutes.
Spoon into bowls, sprinkle with parsley and thyme and serve with buttery mashed potatoes.
