TRAY BAKED SALMON WITH CHILLI AND LEMON
Tender juicy salmon fillets with char-grilled capsicum and onion all cooked together on one tray in a lemon and garlic flavoured marinade – how easy can it get? Taking only 15 minutes to prepare and cook this is a great dish to serve with a crispy green salad. Another dinner dilemma is solved!
4 salmon fillets, skin on, boned
½ cup lemon juice
2 cloves garlic, crushed
1 tbsp olive oil
1 tsp chilli flakes
½ tsp salt
1 tbsp honey or sweet chilli sauce
2 capsicums – red and orange look good
1 large red onion
Preheat your oven to 220°C/440°F on the grill or broil setting. Lightly oil a shallow cake tray.
Combine the lemon juice, garlic, oil, chilli flakes, salt and honey.
Slice the capsicum into 1 cm slices. Slice the onion into wedges and separate the layers.
Place the salmon on the tray and, along with the capsicums and onion and pour over the marinade ensuring that the vegetables and salmon are well-coated.
Cook for 10-15 minutes or until the salmon is cooked through and the vegetables are tender.
Sprinkle with finely chopped parsley or sprigs of coriander and serve with a fresh green salad.
